Sometimes more is more. Halloween is when you can really be extra with your desserts and decor. I decided to fill these cupcakes with a purple chocolate ganache in hope it would ooze out when bitten into. It worked. They look really pro, but in reality were pretty easy to make. Try them yourself!

Extra piping tip to hollow out cupcake centers
Halloween Fancy Sprinkles. We used Witch’s Brew last year, but this year we recommend the colors in Toil + Trouble. (link)
Preliminary steps:
Prepare purple chocolate ganache. Use my recipe here.
Prepare faux swiss meringue buttercream or whipped frosting of choice with green food gel. You can use my recipe Here.
Decorations:
- Hollow out the centers of the cupcakes using the large end of any piping tip. You’re essentially creating a bowl for the ganache to sit in. Be careful to to go too deep to prevent ganache leakage.
- Fill empty centers of cupcake with the purple ganache.
- Starting over the center of the cupcake, holding the piping bag steady & completely vertical, apply even pressure until the frosting billows out underneath almost to the edges of the cupcake. Keep applying squeeze pressure and slowly raise the piping bag up to create a large dollop look.
- Top the frosting with Fancy Sprinkles!
Enjoy your spooky treats!
