It’s no secret that I love me some boxed cake mix. It doesn’t really matter which brand you use, you just need to swap out the key ingredients for premium ones to make it taste like it was from scratch. For those of you who don’t have time or patience to measure all the powdered ingredients, this one is for you.

This is simple, so i’ll keep it simple. Most boxed cake recipes call for eggs, water, and oil. Here’s what I do.
- Swap out the vegetable oil for Refined Coconut Oil. Refined, NOT virgin. Refined has no coconut flavor, and gives the cake a more moist, velvety texture. Plus, the fats bring out better flavor in the cake.
- Use filtered water, not tap water.
- Instead of regular eggs, use pasture raised eggs with dark yellow yolks. You can buy these at the grocery store. Sure, they’re a tad more expensive, but I promise it’s worth it. When the yolks are a deep yellow, it yields a much richer cake flavor.
That’s it! Bake as usual, top with homemade frosting, and no one would ever guess it wasn’t completely from scratch.
